The problem was never what's in the bottle.
It's how the drink is built. Most non-alcoholic beverage education teaches ingredients. What to buy, what to substitute, what to order from a specialty distributor. It assumes the problem is what's in the bottle. It isn't. I'm Scot Maitland, founder of The Elevated Bear. My work sits at the intersection of beverage design, education, and hospitality. I created the ENAB Sensory Blueprint, built on four pillars: Physics, Engineering, Perfumery, and Hospitality, because I needed a repeatable system that worked regardless of what was in the glass. That system is what I teach, consult around, and build from every day.
